INGREDIENTS-
½ Bunch fresh spinach
¼ cup water
ice water for blenching
1 cup multigrain flour/ whole wheat flour
½ tsp salt
6 tbsp spinach puree
METHOD-
Drop the spinach leaves in hot boiling water, when it turns bright green remove from the water and drop into the ice water. Drain the spinach and blend in a mixie with ¼ cup of water. In a bowl add the flour, salt and make a well in the center. Add the spinach puree and water if required. knead it for 4-5 mins. Brush with oil and let it rest for 20-30 mins. Make balls of the dough and roll into a round thin shape. Heat a large skillet on medium high heat. Add the rolled roti to the skillet and cook on both side till done (it should not be crisp).
