🥪 Easy Vegan Sandwich Recipe

🌿 Ingredients
For the Filling:
1 ripe avocado, mashed
1/2 cup grated carrots
1 small cucumber, thinly sliced
1 small tomato, sliced
1/4 red onion, thinly sliced
A handful of baby spinach or lettuce
Salt & black pepper, to taste
Lemon juice, a few drops
1/2 tsp chili flakes or paprika (optional)
2 tbsp hummus (optional but great for flavor and protein)
For the Sandwich:
4 slices of whole grain or sourdough bread (make sure it’s vegan – no dairy or honey)
Vegan butter or olive oil, for toasting (optional)
🥄 Instructions
Prep the spread: In a bowl, mash the avocado with lemon juice, salt, pepper, and chili flakes. You can also add some chopped coriander or mint.
Toast the bread(optional): Lightly toast the bread slices in a toaster or on a skillet for a crisp texture. You can brush lightly with olive oil or vegan butter.
Assemble the sandwich:
Spread hummus on one slice of bread and avocado mash on the other.
Layer with carrots, cucumber, tomato, onion, and spinach.
Close the sandwich, press lightly, and cut in half.
Serve: Enjoy immediately, or wrap for an on-the-go meal. Serve with baked sweet potato wedges or a side salad for a complete meal.
